Tempering is the name given to the process of stabilisation of non-regular chocolate crystals. The whiteness forming over the chocolate after a while, and the sandy aftertaste, points to a badly tempered chocolate.
İstenilen inceliğe ve kıvama getirilmiş çikolata hamuru , 40-45 ° C sıcaklıkta temperleme makinasına gelir. Makine içerisinde bulunan özel alaşım alüminyum plakalardan geçerken önce 32 – 33°C daha sonra 28-29 °C ye düşürülür. En son aşamada ise tekrar 30 °C ye çıkarılarak kalıplama makinasına yollanır . Böylece , çikolata içerisindeki stabil olmayan kristalleri erimiş geriye düzgün yapıdaki kristaller kalmış olur.
YS/T 500-A tempering machine has 3 different tempering zones manufactured of special aluminium alloys. Accurate temperature is achieved in each zone thanks to temperature control system.
All parameters can be entered on the coloured touchscreen, providing ease of use during production. Modular water circulation system allows easy and accurate heat exchange. Circulation pumps, water filters, and heat exchangers ensuring controlled water temperature ensure long useful life without breakage. Its design and material properties prevent unwanted sediments, ensuring hygiene.
Its glass front panels provide easy access to all areas.

Has tempered the structures of the three different zones.
Temperature values ​​can be changed between 28-50 deg.
